New England Nachos
This is very loosely based on a recipe published on a can of soup (see link above).
My version …
Ingredients:
- Stuffing mix - 6 servings, prepared as directed on canister
- Mushrooms - 2 big ones
- Celery - 1 stalk
- Onion - a little
- Chicken - cooked - as much as you like - 1 or 2 cups
- Broccoli - lots
- Milk - 2 cups
- Flour - 3 tablespoons
- Butter - 3 tablespoons
- Cheddar cheese - at least 1 cup, maybe 2
Instructions:
- Prepare the stuffing mix as directed, in a 10 inch skillet, fry or sauce pan
- Spread the chicken over the stuffing mix
- Use a smaller skillet, fry or sauce pan to lightly brown the mushrooms, celery and onion
- Put the mushrooms, celery and onion on top of the chicken and stuffing
- Cut the broccoli up and microwave it with some water for about 4 minutes
- Using the same smaller skillet, create a cream sauce. Mix the milk, flour and butter together and stir constantly until it thickens
- Add the cheddar cheese to the cream sauce and stir
- Go get the broccoli out of the microwave and put it onto of the stuffing and stuff
- Pour the cheese sauce over everything and put it in the oven
- Cook for about 25 minutes at about 350 degrees
